Vegan apple crumble cake

This delicious cake is one of our favorite! It’s perfect for breakfast, as a snack or dessert. It also doesn’t cost much to prepare, considering it has simple ingredients.


INGREDIENTS


For the crust and crumble:

- 50 grams roasted almonds

- 125 grams sunflower oil

- 100 grams sugar

- 80 grams water

- 350 grams all wheat flour

- 6 grams baking powder

- a pinch of salt


For the filling:

- 50 grams roasted almonds chopped

- 10 grams almond slices (for decoration)

- the juice of 1 lime

- 2 apples and 2 pears

- vanilla

- 1 tablespoon of sugar

- 3 tablespoons of quince jam


Start by making the crust for the cake.

Ground the almonds into a flour by using a blender.

In a large bowl or a dough mixer, add the oil, sugar and water and mix for about 5 minutes or until the sugar melts.

Add the flour, almonds, the baking powder and salt and continue mixing it for another 10 minutes or so (until the dough comes together).

Place the dough in the refrigerator for 30 minutes.


Now you can start preparing the filling.


In a medium pot add the apples and pears cut into small pieces. Add the lime juice, sugar and vanilla. Cook on medium heat for about 7-8 minutes.

When it’s ready, add the chopped almonds and jam and mix together.


Take the dough from the refrigerator. We’ll use 3 quarters of it for the crust and 1 quarter for the crumble.


So take 3 quarters of the dough and place it on a springform pan. Shape it by using your hands.

Add the filling on top of the crust.


Break up the remaining dough with your hands to form the crumbs and add them on top of the filling.


Bake at 180 degrees Celsius (350 degrees Fahrenheit) for 35 minutes until the cake turns golden brown.
