Vegan pudding with white chocolate and matcha

When I was in Japan a couple of years back I discovered matcha and was instantly in love with it.

I tasted the traditional matcha tea in a bamboo forest, which is a true ritual for Japanese people.



I also tasted many desserts, and the white chocolate + matcha combo is divine!!!

I will share with you below our recipe for a vegan pudding with vegan white chocolate and matcha.




INGREDIENTS for 4 servings:

- 1 can of 400 ml coconut milk (only the fat part, without the liquid)

- 2 tablespoons corn starch

- 1 tablespoon matcha powder

- 80 grams sugar

- 250 ml soy milk

- 75 grams vegan white chocolate


In a medium sized pan mix the corn starch, sugar and matcha. Add the soy milk and coconut milk and mix until smooth.


You can now put the pan to cook on medium heat. You have to stir continuously to avoid it sticking to the pan.


As soon as it starts to boil and thicken turn off the heat.

Add the white chocolate and mix well until the chocolate melts completely.


Pour the pudding into small cups and refrigerate for a few hours prior to serving.
