Vegan pasta with creamy broccoli and almonds sauce

INGREDIENTS for 4 persons:

- 400 gr broccoli

- 50 gr roasted almonds

- 50 ml vegan cooking cream

- 2 tablespoon extra vergin olive oil

- 400 gr of pasta

- salt and pepper

- vegan Parmesan (optional)



Start by putting to boil the water for the pasta.

Now you can prepare the creamy sauce.


Cook the broccoli in pot with water and salt.

When the broccoli is cooked, blend them together with the almonds, the oil, the vegan cooking cream, the salt and pepper and a few tablespoons of the water where you cooked the broccoli.


Cook the pasta al dente, and as soon as it‘s ready drain it but keep a few tablespoons of the water where you cooked the pasta.


In a large bowl mix the broccoli sauce with the pasta. If the pasta dish seems a bit dry, add a few tablespoons of the water where you cooked the pasta.


If you want, you can sprinkle some vegan Parmesan on top.
