Vegan bruschetta with beans spread and onions topping

This delicious bruschetta is a super healthy way to get your complete protein intake by paring grains and legumes.


INGREDIENTS:

- slices of whole wheat bread

- beans spread (you can find the recipe here: https://therainbowcarrots.wixsite.com/vegan/blog/super-healthy-vegan-beans-spread)

For the onions topping:

- 3 medium onions

- 3 tablespoons extra virgin olive oil

- 1 teaspoon of concentrated tomato paste

- 100ml of water

- salt




How to prepare the onions topping:


Start by chopping the onions as shown in

this image.


In a small sauce pan add the extra virgin olive oil and the onion and cook on a low heat.


When the onions become golden brown, add the water and a pinch of salt.

When the water is almost completely absorbed, add the concentrated tomato paste and cook for another 5 minutes.



The onions topping is now ready.





You can now prepare the bruschetta.

Start by toasting the slices of whole wheat bread.

Add a layer of the beans spread and top it with the onions topping.
